Harvesting Sugarcane

The journey begins with the careful selection and harvesting of mature, organic sugarcane. Only the finest, chemical-free sugarcane stalks are chosen to ensure the highest quality jaggery.

Extracting Juice

The harvested sugarcane is thoroughly cleaned and crushed to extract fresh, pure juice. This juice is then filtered to remove any impurities, ensuring a clean base for the jaggery.

Clarification

The filtered sugarcane juice is then boiled in large, open pans over a moderate flame. Natural clarifying agents such as lime or vegetable extracts are added to the boiling juice to remove any remaining impurities and foam. This step is crucial for obtaining clear and pure jaggery.

Granulation

To make jaggery sugar, the solidified jaggery blocks are further processed. They are broken down into smaller pieces and then ground into a fine, granulated form. This granulated jaggery is similar in texture to traditional sugar but retains all the natural nutrients and flavors.

Cooling and Solidification

Once the juice reaches the desired consistency, it is poured into molds or trays to cool. As it cools, it solidifies into blocks of jaggery. These blocks can be molded into various shapes and sizes, depending on the requirement.

Concentration

As the juice continues to boil, it gradually thickens and changes color, transitioning from a light yellow to a deep golden brown. This process requires constant stirring and skimming to prevent the formation of crystals and to ensure a smooth texture.
